Dinner ideas: zesty one-pan chicken

Try this delicious dinner idea, courtesy of Slimming World's latest recipe book...

 

Serves: 4

Preparation time: 25 minutes

You will need...

4 skinless and boneless chicken breasts

Low-calorie cooking spray

350ml boiling chicken stock

400g can chopped tomatoes

1 garlic clove, crushed

Finely grated zest and juice of 1 lemon

1 tsp Italian herb seasoning (or use a mix of oregano, basil and marjoram)

2 tbsp capers, drained

2 x 300g cans new potatoes in water, drained

12 silverskin onions in vinegar, drained

Salt and freshly ground black pepper

Small handful of fresh basil leaves, to garnish

1 Place the chicken breasts between two sheets of cling film and lightly flatten them with a rolling pin or mallet.

2 Spray a large, wide non-stick frying pan with low calorie cooking spray and place over a high heat. Add the chicken in a single layer and fry for 4 minutes to brown, turning once.

3 Add all the other ingredients, season well and cook over a medium heat for 10 minutes or until the chicken is cooked through.

4 Remove from the heat, garnish with basil leaves and serve with your favourite vegetables.
